N-3 polyunsaturated fatty acids (n-3 PUFA) have many benefits, which contribute to human health, and they play an important role in preventing cardiovascular diseases. Among these fatty acids belong docosahexaenoic and eicosapentaenoic, but also linolenic fatty acid has a benefit effect on human health. The consumption of natural source of these fatty acids (fish and marine crustacean) is very low in Czech Republic. This project suggests improving the consumption of the n-3 PUFA (mainly linolenic) by enriched eggs. The consumption of eggs is traditionally high in Czech Republic (despite some decrease). The use of linseed and linseed oil in the mixture for laying hens is one of the easier ways to increase the content of n-3 PUFA in the yolk fat. The aim of this project is to find the improvement of n-3 PUFA after feeding linseed and linseed oil. The aim is also to evaluate the effect of these feeds on egg quality (eggshell, yolk, albumen), laying hens performance and sensory quality of the eggs. Sensory quality and the content of fatty acid would be analyzed also after storage and heat treatment. Also the effect of these feed on antioxidant stability and blood parameters are going to be evaluated.
