Description in original language: Cílem práce bylo zjistit vliv kategorie pohlaví prasat na vybrané kvalitativní ukazatele ve vepřovém mase (obsah sušiny, obsah vnitrosvalového tuku, ztráta vody odkapem, diametr svalového vlákna a parametry barvy masa). Do pokusu bylo vybráno 60 prasat (30 ks prasniček a 30 ks vepřů). U ukazatelů jatečné hodnoty byl zjištěn vysoce průkazný rozdíl (p < 0,01) u podílu svaloviny a průkazný rozdíl (p < 0,05) u výšky hřbetního tuku mezi prasničkami a vepři. V nutričních a technologických vlastnostech mezi kategoriemi pohlaví nebyly zjištěny průkazné rozdíly (p > 0,05). V intenzitě barvy vepřového masa nebyla zjištěna statistická diference (p > 0,05) mezi kategoriemi pohlaví.
Description in English:
The aim of this study was to evaluate the effect of sex on the meat quality of pigs (dry matter, content of fat, drip loss and diameter of muscle fibres). The values in CIELab system were also monitored. Totally 60 pigs were included in the experiment (30 gilts and 30 barrows). The lean meat content was significantly the highest in gilts (p < 0.01). No significant differences were found among the pigs in selected nutritional and technological quality traits (p > 0.05). Sex of the fattening pigs (barrows and gilts) had not significant effect on meat colour, on none of the monitored parameters.
