Title of the thesis:Evaluation of the antioxidant capacity of selected eatables of plant origin
Summary:I wrote the thesis on the Mendel University, Faculty of Horticulture, Department of Post-Harvest Technology of Horticultural Products in 2008/2010. My bachelor thesis focuses on the significance of antioxidant properties of selected substances in food of plant origin. It explains terms such as the antioxidant activity, the formation of free radicals and the oxidation stress. It characterizes individual representatives of antioxidants and their relation to the human organism and their interactions. It describes basic methods being used to ascertain antioxidant capacity of food, their advantages and disadvantages, possibilities of their use for individual measurements and standards for interpretation of results thus acquired. The work compares selected eatables with content of antioxidant substances such as the crop plants of Alliaceae family, garlic and onion, apples, soy beans, strawberries and grapes. The work also deals with legal restrictions and resulting demands on antioxidant content in food, addition and ascertaining limits for addition of antioxidants in food.
