|Title of the thesis:||The comparsion of blue grapes varieties for rose wine production.|
|Summary:||This thesis were worked in The Department of Post-Harvest Technology of Horticultural Products at Faculty of Horticulture at Mendel University of Agriculture and Forestry in Brno in year 2007. The objektive of this work were to define the appropriate variety of blue grapes to produce rose wine. It was made four rose wines, from four the most growed varieties of blue grapes - Svatovavřinecké, Zweigeltrebe, Frankovka, André. Wine was made in two years, in two sugar content levels. By all wines and materials, taken by the technological process were monitored colour parameters, the intesity and shade of colour, the mass of polyphenols and anthocyans. Than it was evaluated senzorical parameters of all wines. It was demonstrated a lot of coherences between analytical and senzorical evaluation. The capacity of anthocyans in wine cohered to a kapacity of anthocyans in grape skins. The capacity of anthocyans is the most influential factor for the intensity and shade of colour. The senzorical evaluation shows that the best wines was made from Frankovka and Zweigeltrebe, both made from the more ripenned grapes, category the late harvest. The late harvest wines was evalualted better than a quality wines, but this diference wasn't statstical significant.|
