Title of the thesis:Identification a critical points of quality fruit and vegetables in fresh condition and possibilities of their management.
Summary:This thesis is focused not only on quality management systems, food safety and related description of week areas in the chain but also on the process of creation of European and world legislation. Market, its regulation and crisis prevention is nowadays one of the priorities of European Union. In order to prevent crisis which aroused in recent history and caused financial loses of apples in Community due to apple import increase from some of third world countries from south half-world, marketing standards of quality are serving besides other tools for market regulation. Farming products, on which this thesis is focused (apples, onions) are plenteously cultivated in Slovakia due to suitable climatic conditions as well as due to high favor among consumers. It is therefore justifiable to pay close attention to them and to study possible factors influencing their quality on all levels of food chain since farming until exhibition and offering them to consumers directly on the desk in retail operations. Target of this thesis was identification and description of individual critical points in the chain which negatively influence quality of fresh fruit and vegetable (apples, onions) and searching for optimal solutions for their removal.
