Title of the thesis:The use of mixograph for breeder screening of triticale to baking purposes
Summary:Triticale (X Triticosecale Wittmack) is a man-made crop combining the genomes of wheat and rye. To enhance the bread-making quality in triticale is used the glutenin allele Glu-D1d with positive effect that encodes HMW (High molecular weight) subunits 5+10. The Glu-D1d shows direct effects on good rheological characteristics in wheat. It is located on wheat chromosome 1D which is absent in commonly grown triticale cultivaris. For achieve good bread-making quality in triticale is necessary to combine suitable glutenin and gliadin alleles conditioning better dough properties with the genes controlling low alpha-amylase activity (resistance to sprouting) which is related to high Hagberg falling number. Presented diploma work describes creation of triticale, its use and possibility increase of bread-making quality. It is focussed mainly on exploration the mixograph evaluation of quality grain for sorting big quantity samples during triticale breeding. Mixograph is an instrument which detects behaviour dough during mixing. The mixograph allows to analyse higher number of samples per manshift in comparison to farinograph. This method is better for breeding purposes of winter cereals where is short time between harvest and sowing. Three-years data on grain quality in selected winter triticale lines made in firm Agricultural research Institute Kromeriz, Ltd. (Czech Republic) from 2007, 2008 and 2009 harvests are given.
