Title of the thesis:Hodnotenie zmien kyselín v hrozne a vínach
Summary:Diplomová práca na tému „Hodnocení změn kyselin v hroznech a vínech“ je rozdelená na teoretickú a praktickú časť. V teoretickej časti boli popísané jednotlivé kyseliny, možnosti ich regulácie v muštoch a vínach a vybrané metódy ich stanovenia. V praktickej časti diplomovej práce boli sledované v bobuliach hrozna vybrané parametre (pH, celkové titrovateľné kyseliny, kyselina vínna a kyselina jablčná) počas doby dozrievania. Sledované boli odrody Müller Thurgau, Pálava, Frankovka a Svätovavrinecké. Bobule boli odoberané v pravidelných týždenných intervaloch od 2.8. do 20.9. 2018. V druhej časti experimentálnej časti práce boli sledované vína v troch fázach vinifikácie. Sledované boli parametre pH, celkové titrovateľné kyseliny, kyselina vínna, jablčná a mliečna. Získané výsledky boli interpretované pomocou tabuliek a grafov. Následne boli štatisticky zhodnotené a popísané.
