Title of the thesis:Color parameters of blue grapes
Summary:This thesis were worked in Faculty of Horticulture in Lednice na Morave, Mendel University of Agriculture and Forestry in Brno. The objective of this work were monitoring of colours parameters of blue grapes, which were divided in two groups -- some spicies of Vitis vinifera (traditional), species with might production of anthocyanins and new-cultivated group. Grapes were obtained in vintages 2004 and 2005. There were analyse concentration of anthocyanins, sugars and acides in all grapes. All results were tested by statistic method (analysis of variance) by program Unistat for Excel 5.1. From results is obvious, that the group of species with might production of anthocyanins and new-cultivated contained higher concentration of anthocyanins than traditional group. Microbial attack had negative influence to concentration of anthocyanins (decrease) and acids (increase).
